COURSE OUTLINE

This is a basic qualification in Food Hygiene Awareness. It is designed for people who perform “low risk” tasks for example maintaining stores, clearing tables, low risk duties in food factories and  duties similar to “meals on wheels”. It is also suitable for pre employment programmes as a basic introduction to food hygiene awareness.

KEY LEARNING OUTCOMES

The Need For Food Hygiene

  • incidence of food poisoning;
  • possible reason for increase;
  • symptoms and causes of food poisoning;
  • legal responsibilities of food handlers;

Food Poisoning Bacteria

  • the nature of food poisoning bacteria and their effects on food;
  • growth requirements of bacteria;
  • range of “The Temperature Danger Zone” and its importance to food storage;
  • Refrigerators and freezer;
  • high risk foods;
  • sources of bacterial contaminations;
  • food storage

Hygiene Procedures

  • hygiene standards for food handlers;
  • importance of hand washing, personal hygiene and appropriate clothing;
  • methods of preventing food contamination;
  • signs of pest infestation;
  • definitions of “clean-as-you-go” and “scheduled cleaning”;
  • uses of cleaning and disinfection chemicals;
  • cleaning procedures for premises, equipment and utensils;
  • reporting food safety hazards to supervisors 

TRAINING DURATION AND ASSESSMENT
This is a half day course and the assessment for this qualification is by a 20 minute multiple-choice examination consisting of 16 questions.  12 correct answers are required to achieve the certificate for this qualification.  The  Awarding Body for the Level 1 RSPH Certificate in Food Hygiene Awareness  is RSPH  which is the Royal Society For Public Health

Ursula Walsh is a Chartered Environmental Health Practitioner with 16 years experience as a practitioner in various UK and NI Councils. She has over 21 years experience delivering training on courses such as food safety, health and safety and environmental awareness. Ursula has also worked as a Health and Safety Inspector with the Health and Safety Executive for Northern Ireland.
